Quick end of the day meal for two

EMC Lifestyle When you come home from work tired at the end of the day, it's always helpful to have a recipe that's easy to prepare without a lot of effort. That's when this spaghetti and tuna dish comes in handy.

You won't have to make a special trip to the grocery store because this recipe calls for ingredients that you probably have on hand - spaghetti, tuna, mushrooms, onion, garlic, milk and Parmesan cheese.

You can make it with whole wheat spaghetti or, my favourite, spaghettini, which is a thinner form of spaghetti.

Use the solid white tuna packed in water, and either canned or fresh mushrooms. For variety, try President's Choice canned mushroom medley, which is a combination of portobello, cremini and white button mushrooms.

SPAGHETTI WITH TUNA SAUCE

enough spaghetti for 2 people

1 tbsp. butter or margarine

1 tbsp. olive oil

284 mL can sliced mushrooms (drained), or 5-6 fresh mushrooms, sliced

1 medium onion, diced

1 small clove of garlic, minced

170 gm can solid white tuna

1 cup milk

1 tsp. flour

1 tsp. dried or fresh minced parsley

freshly-grated Parmesan cheese

Cook the spaghetti in lightly salted water until it is tender but still firm to the bite.

While the spaghetti is cooking, melt the butter and oil in a small frying pan. Add the sliced mushrooms, and cook, over medium heat, until they begin to brown.

Add the onion and garlic to the mushrooms, and continue cooking until the onion is softened, about 2-3 minutes.

Drain and rinse the tuna, then break it into chunks with a fork. Transfer the tuna to a food processor, and add the milk and flour. Cover, and process until smooth. The mixture will be very thin.

Pour the tuna mixture into the pan with the mushrooms and onion. Cook on medium, stirring, for 3-4 minutes, until the sauce has thickened.

Drain the cooked pasta, and divide it between two plates. Ladle half of the tuna sauce over each portion.

Sprinkle with parsley and grated Parmesan cheese, and serve immediately. Garlic bread and a salad go well with this dish.
